Turkey Lettuce Wraps

Lauren LIess' Turkey Lettuce Wraps
A light and nourishing deconstructed meal that comes together quickly and easily. We love putting out the meat and lettuce separately and family style so everyone can have fun making his or her own wraps and we can relax a little more with meal prep!

Ingredients  

  • 1 lb ground turkey
  • 1 head of butter lettuce
  • 1 cup spinach chopped
  • 1/2 bulb garlic minced
  • 1/4 head cabbage julienned
  • 1/4 cup pumpkin seeds
  • 1/4 cup pine nuts
  • 1 tsp lemongrass grated
  • 1/4 cup fresh herbs (we use cilantro, lovage, dill, and curry plant) roughly chopped
  • 1 tsp grated ginger freshly grated

Instructions

  • Prepare lettuce by tearing off leaves, washing, and patting dry.
  • In a medium saucepan, sauté onion.
  • Add in the ground turkey and start to brown on medium-high heat.
  • As the meat cooks, salt and add in minced garlic, pumpkin seeds, pine nuts, cabbage, spinach, and ginger.
  • Once the turkey has cooked, simmer on low and salt to taste.
  • Sprinkle in the about a third of fresh herbs and lemongrass.
  • Serve in a bowl with lettuce leaves on a separate platter and let everyone wrap and eat family style or plate individual wraps on plates. Fill each leaf with turkey filling and top with a sprinkling of fresh herbs and enjoy!
