pesto bruschetta

A savory green bruschetta perfect for kids but pretty and scrumptious enough to impress fancy guests! ;)

Ingredients  

  • 1 loaf of crusty bread (Sourdough is a fave/ French/ Italian etc.)
  • 4 cups greens for base of pesto (we have used carrot tops, basil, spinach, parsley, and any combination them all!)
  • 2 tbspn nuts crushed
  • 3 tbspn parmesan cheese shreded
  • 6 tbspn olive oil or more!
  • salt & pepper to taste
  • 5-6 cloves garlic minced
  • lemon zest from 1 lemon grated
  • 1 tbspn fresh herbs for garnish (basil, parsley, spinach etc) julienned

Instructions

Prep'ing the Bread

  • Preheat oven to 400 F.
  • Slice bread into 1/2" - 3/4" thick pieces. Consider slicing each piece in half if you loaf is a large one for a more "bite sized" appetaizer.
  • Place sliced bread into trays/ dishes and bake in the oven for 10 minutes.

Pesto

  • With a mortar & pestle OR in a blender, combine and blend all pesto ingredients: greens, olive oil, salt and pepper, chopped walnuts, parmesan cheese, lemon zest.
  • Salt and pepper to taste.
  • Add more olive oil depending upon your desired level.

Plate

  • Drizzle olive oil on each piece of bread.
  • Place a generous dollop of pesto on each piece of bread and spread.
  • Top with parmesan cheese and fresh julienned herbs.
  • Serve on a breadboard or platter and enjoy!
