Warm Mushroom Salad

This is a ridiculously good and delightful little dish! Hearty enough as a main dish or eat less and have it with a simple soup or meat.

Ingredients  

Warm Mushroom Mixture
  • 6 cups mushrooms (approx 2 8 oz packages) thinly sliced
  • 1/4 onion (yellow) minced
  • 1/2 clove garlic minced
  • 1-2 tbspn olive oil
  • 1 tbspn butter
  • 1 cup fresh herbs (I used basil, Italian parsley and chives with a tiny pinch of marjoram and oregano.) chopped
Nonno's Salata Dressing
  • 1/2 onion (yellow) thinly sliced
  • 4 tbspn olive oil
  • a few splashed of balsamic vinegar
  • salt & pepper

Instructions

Make the Dressing

  • Slice onions and drizzle olive oil and vinegar on top. Go heavy on the olive oil and lighter on the vinegar. Salt and pepper to taste.
  • Muddle the onions with a wooden spoon or fork and let sit for 15+ minutes. The color should be a warm medium to light brown.

Make the Herb Mixture

  • Chop all greens and herbs and set aside in a bowl.

Make the Mushroom Mixture

  • Sautee onions, mushrooms and garlic in olive oil and butter over medium heat until soft. Salt and pepper to taste.
  • Sprinkle about 1/4 of the fresh herbs into the mushroom mixture. Cover and keep warm.

Put it all together

  • Salt grain warm grain (wild rice/ farro/ couscous etc.) to taste and spoon it onto a large platter.
  • Pour the mushroom mixture on the grain. Do not stir.
  • Top with Nonno's dressing. Serve family style and enjoy!
